Is there anyway with which we can have different day off for different activity...

In this if i wanna break the weekend off line an continue the activity counting where its available.
i.e. In scanning i dont want any weekend off line on sunday.....while in Printing i want holiday on Thursday b'coz machine is not available and In package staff it is also continuing doing packaging on sunday
